Melted snowman cupcakes #christmas #cupcakes

­­Check this melted snowman is super funny. These easy-to-make make it very fun to bake with the whole family and make for a quick and easy Christmas party meal.


Ingredients :
  • eggs 2 medium
  • vanilla extract ½ tsp
  • plain flour 200g
  • cocoa powder 20g
  • caster sugar 200g
  • vegetable oil 200ml
  • bicarbonate of soda ½ heaped tsp
  • natural yogurt 150g

MARSHMALLOW ICING
  • full-fat soft cheese 250g
  • vanilla extract ½ tsp
  • white marshmallows 150g
  • milk 90ml
  • double cream 75ml, whipped

SNOWMAN DECORATIONS
  • candied peel 12, pieces
  • M&M’s 36, of different colours
  • white marshmallows 12, medium
  • black icing pen
  • Matchmakers 12, snapped in half


Method :
  1. To make icing, melt marshmallows in milk over very low heat. Stir to stop them from sticking - be careful not to burn the mixture. Spoon into a bowl and cool completely. Meanwhile, whip the cheese with vanilla until smooth. When the marshmallow mixture is cool, fold it together, then fold it in double whipped cream and cool it for at least an hour.
  2. Preheat 180C oven / 160C / gas fan 4 and 12-hole muffin tin line with cupcake cases. Stir in the sugar and oil, then shake the eggs one at a time, adding vanilla with the second egg.
  3. Mix flour, cocoa and bicarb, then add half the oil mixture. Shake before adding yogurt. Add the remaining dry ingredients. Divide between cases and bake for 20 minutes. Go cool on the can for a few minutes, then transfer to the shelf until it's really cold.
  4. Place the marshmallow icing in the pipe bag, snip it from the end, and the nozzle pipe straight up the cupcakes to make the snowman body.
  5. Draw a face on each marshmallow with black icing, keep it in a little nose peel then pop over the icing. Add & from Teddy Mappa for buttons and split in two matchmakers for hands.
