Ingredients :
MUFFINS
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 & 1/2 cups all purpose flour
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup unsweetened applesauce
- 2 eggs
CRUMB TOPPING
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 cup all purpose flour
- 1 stick (1/2 cup) butter, melted
Direction :
- Preheat the oven to 425 degrees f. Regular-sized muffin Pan line with liner.
- Make crumb topping: in a small mixing bowl combine flour, sugar, cinnamon, and melted butter. Mix with a fork until loose and wet. Set aside.
- Making muffins: in small mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a large mixing bowl, combine Apple sauce, whisk the sugar and vegetable oil, together. Add the eggs, beating well again. Using a spatula, gently mix together the dry ingredients until just combined.
- Fill each muffin Cup almost to the top. 12-Cup muffin will be full, but it was good! Using your fingers, a generous amount of Crumble topping on each muffin.
- Bake at 425 ° F for 7 minutes. Then keep the muffins in the oven, turning the oven to 350 degrees F and bake for 12-14 minutes or until a toothpick inserted in the Center comes out clean.
- Allow the Muffins to cool for 10 minutes, then remove from muffin pan. Once the Muffins to cool, you can add a powdered sugar glaze (powdered sugar + milk) If you want to!
